Are you experimenting with a Ketogenic eating pattern? It can be difficult to get used to eating so much fat in your diet. I know that recovering carb addicts (like myself) will also often miss that little sweet treat at the end of the day.
It’s time you met this little gift from heaven… the FAT BOMB. A fat bomb is basically a little treat, that gives you a huge dose of fat, and not a lot else. They can be sweet or savory, but I am personally a huge fan of the sweet coconut-oil-based treats!
I’d like to personally introduce you to my favorite fat bomb creation… the Lemon Meringue Fat Bomb!
Lemon Meringue Fat Bombs

Ingredients
- 1/4 cup Nikki's Vanilla Cake Batter Coconut Butter
- 1/2 cup coconut oil
- 1/2 cup butter
- 4oz cream cheese
- 2 lemons, juiced and zested
- 1/4 tsp vanilla extract
- 1/4 cup Swerve
- 1/4 tsp SweetLeaf liquid Stevia
- Optional: 2 drops lemon essential oil
Instructions
- Line a 24 count mini-cupcake baking sheet with mini-baking cup liners.
- Melt coconut butter, coconut oil, butter and cream cheese in a saucepan over medium heat, stirring continuously.
- Remove from heat when melted - it will not be well combined at this point. Keep stirring until the mixture thickens and combines.
- Add the lemon juice (about 1/4 cup,) lemon zest, vanilla, Swerve, Stevia, and (optional) lemon essential oil. Continue stirring until combined.
- Pour about a tablespoon of melted mixture into each mini-baking cup (candy molds work well, too.)
- Place the baking sheet in the fridge and let chill for 2 hours. When hardened enough to easily remove from the liner, ENJOY!

I never have a hard time hitting my fat intake goals when these lil babies are in the fridge!
It’s important that you store fat bombs in the fridge so they don’t melt, and you might have to hide them WAY in the back where your family can’t find them… because they’re too good to share!
